I love this book, and now I have a cake to read with it!

I got this recipe from a old man at a farmers market who's wife enjoys making this with her grand kids. The best part is that I can read one of my favorite Maurice Sendak books, "In the Night Kitchen" with my kids while eating cake for breakfast-- what could be better?
If you do check out the book be aware of two things; you need to read it with a jazzy do-op sing song for the bakers, and sorry but the little boy falls out of his clothes and reveals all so if that bothers you, maybe it's not for you.

Whole Wheat
Morning Cake

7 cups whole wheat or spelt flour

1/4 cup flax seed (optional)
1/2 cup oats
2 tsp. baking powder 2 tsp. baking soda
1 tsp salt
1/2 c. brown sugar
3/4 c. melted butter & cooled to room temp.
1/2 c. honey (or less & compensate w./ sugar or molasses)
2 tsp. vanilla
3/4 quart buttermilk

The Cake: Mix dry ingredients in a large bowl, set aside. In separate bowl combine butter and honey, then add vanilla.
Combine butter mixture with dry ingredients using a pastry blender. Slowly stir in the buttermilk. Pour into 2 9X13 baking pans. Cook at 325 until toothpick comes out clean. (about 30-40min.)
At this point I like to eat one as a morning cake served in a bowl with milk poured on top.

The Cereal:

Crumble remaining cake into fine crumbs and toast in baking sheets at 250 until they begin to brown. Stores well after cooled, serve with milk.

Dang it, I wish we could eat cake and read with you today! And the little-boy-naked thing doesn't bother me. Heck, my son has been half naked (I'll let you guess which half) for the last 3 days while we've been potty training. We miss you!
